Thailand Cooking Class - Pad Thai + Tom Yum Soup
Less is more
I think that I was Thai in another lifetime. I think this for a few reasons, most of which came to my attention during our cooking class yesterday.
For one thing, I find great pleasure in the details - I like spices in tiny bowls, finely chopped herbs and banana leaves cut into jig jags.
I also enjoy putting all the colors of the rainbow into my body. Natural energy. Purple eggplant, red pepper, yellow ginger, orange tamarin, green basil, all mixed with white coconut cream.
An artist's dream - to paint with food and eat the final product.
In Thai culture, they say less is more, but what I think they mean is less of more -more flavors and more colors mixed in a wok and melded into a sweet and spicy symphony of flavors.
